I'm not going to be one of those people that will tell you a whole damn story and then put the recipe at the very end (unless it's a really, really good story).
This salad is perfect for non-meat eaters but still want protein, for people who are trying to eat healthier (me) but don't want to sacrifice taste, and people who "don't like salad." I made this salad once for my mom's friend who is a picky eater and she went back for seconds and thirds.
I liked it too and now it's in my rotation. Enjoy!
ARUGULA SUPER SALAD
*Feeds 5-ish.
1 can of chickpeas
1 avocado
1 container of Publix crumbled feta cheese
1.5 bags of arugula
12 strawberries diced
1/2 cucumber diced
1 tomato diced
Mix everything together and add the avocado on top and serve. It's bright, beautiful, and most importantly, tastes delicious!
